If you like chocolate, you’ll want to try this yummy cake! You can omit the nuts if you prefer, but I agree with my dad who used to say “everything is better with nuts!”
Cocoa Cola Cake
Serves 10-12
CAKE INGREDIENTS
2 cups flour
2 cups sugar
1 teaspoon baking soda
1 cup butter or margarine
3 Tablespoons baking cocoa
1 cup cola
½ cup Buttermilk
2 eggs, beaten
1 teaspoon vanilla
1 cup miniature marshmallows
ICING INGREDIENTS
½ cup butter or margarine
2-3 Tablespoons baking cocoa
6 Tablespoons cola
3¼ cups sifted powdered sugar
1 cup coarsely chopped nuts
PREPARATION
Preheat oven to 350°.
In a mixing bowl, combine the flour, sugar and baking soda; set aside.
In a saucepan, bring butter, cocoa and cola to a boil; stir into the dry ingredients.
Stir in Buttermilk, beaten eggs, vanilla and marshmallows; mix well. Pour into a greased 9 x 13 pan. Bake at 350° for 40-45 minutes until cake tests done.
For icing, combine butter, cocoa and cola in a saucepan and bring to a boil. Remove from the heat and stir in powdered sugar and mix well. Spread over hot cake. Sprinkle with nuts. Cool before cutting.
